Menu Plan Monday and Garden Update: 9/22-9/28

Well, friends, today is officially the first day of Fall! The weather has cooled down enough that I pulled out my winter clothes and splurged on a cozy cardigan last week. I'm excited for the fun, coziness and comfort food that comes with the season and I can't wait to attack our Fall Bucket List!

With the advent of fall comes the end of summer. Our large garden was very good to us this year, and we were able to can and freeze plenty of produce for the winter. While I love the fresh fruit and veggies of summer, I'm kind of glad for a break from the busy canning and preserving season. We still have applesauce to can and pumpkins/butternut squash to puree and freeze, but that will come at a slightly more leisurely pace. Hooray for fall!

Garden Update:

This should be the last garden update of the season. The tomatoes are pretty much done, and Hubby plans to pull the plants up this week. We still have some kale, peppers, butternut squash, blackberries, and raspberries, but they should be finishing up quickly too.
This week we harvested:
  • Kale
  • Peppers
  • Tomatoes
  • Blackberries
  • Raspberries

This Week's Menu Plan:

Monday: Chicken & Rice Soup, Biscuits

Tuesday: Corned Beef in the Crock Pot, Salad

Wednesday: Salmon, Mac & Cheese, Green Beans

Thursday: Grilled Chicken Legs, Easy Oven Roasted Potatoes, Salad

Friday: Leftover Chinese

Saturday: Kiddo's Birthday Dinner!

Sunday: Leftover Corned Beef
These Easy Oven Roasted Potatoes are one of our favorite side dishes. Kiddo loves them!
