Menu Plan Monday: 5/19-5/25


Happy Monday, friends! What have you been up to?

Our entire week seemed to revolve around our chickens. Sadly, one of our hens died Monday morning (the second one to die while laying/trying to lay an egg). Long story short, it appears to be a genetic issue with hens from the hatchery where we purchased them. With only four hens, left, we knew we wanted more girls and were prepared to order more. Serendipitously, I learned of a nearby farm that was selling a small flock of laying hens, and we called to reserved six on Thursday. Saturday, we "took care of" our meat chickens, and yesterday we picked up our new ladies. They are currently residing in the meat birds' pen until Hubby can finish their coop.
These girls are a cross between a Rhode Island Red and a Buff Orpington.
We should hopefully start getting eggs from these beauties in 2-4 weeks. I love having chickens, but some weeks are definitely hard.

This Week's Menu Plan: 5/19-5/25


Monday: Salad Night

Tuesday: Maple Dijon Pork Chops, Baked Potatoes, Broccoli

Wednesday: Slow Cooker Stroganof (with venison), Baked Potatoes, Green Beans

Thursday: Chicken Salad Wraps, Baby Carrots

Friday: Tilapia, Rice, Green Beans

Saturday: Something on the grill (Ribs, if I can find some good ones at the store)

Sunday: Crock Pot Buffalo Chicken Sandwiches, Rolls, Baby Carrots, Homemade Ranch

Freezer Recipes: 

I don't have plans to eat any meals from the freezer this week (except, of course, for the meat that I'll thaw for meals). However, I've been busy stocking my freezer with some some healthy meals and meal ingredients!
I prepared 9 pounds of ground turkey for the freezer, since it was on sale for $1.66/lb last week, and we prepared our meat chickens for the freezer as well. I plan to share a post with the recipes I used this week.

Crock Pot Recipes: 

My crock pot was neglected last week, I'll be making up for it this week with three meals in the crock pot. First, Hubby has requested that I make this  Apple-Cinnamon Steel Cut Oats in the Crock Pot tomorrow morning. Then on Wednesday, I'll be making Slow Cooker Stroganof using venison, which was a big hit when I tried it several weeks ago. Finally, we'll enjoy some yummy Crock Pot Buffalo Chicken Sandwiches on Sunday.


Recipes I Tried:

I experimented with a recipe for Freezer-Friendly Turkey Burgers, and boy, were they good! I hope to share the recipe soon, but I forgot to make buns (whoops!), so we had our burgers on bread. They were still tasty, but I would like to take new pictures with actual buns before I blog about it.

  1. I always make sure to come to your blog everyday, especially on Mondays because I forgot to plan my meals and have no clue what I'm supposed to make for dinner tonight! That stroganoff sounds good but I plan on using beef.

      In full disclosure, I DID NOT feel like meal planning this week. :) I did it because it's part of my blogging routine, and even then, I wrote this post with a whiny toddler at my side this morning because I procrastinated.
      I just looked through previous meal plans and my "Dinner Ideas" Pinterest board until I had enough meals for the week. Even then, I may switch things up with something from the freezer because I'm not quite committed to this plan.
      The Stroganof is excellent, and just for a tip, I use Greek yogurt instead of sour cream because it's less wasteful. We never get through a whole container of sour cream before it goes bad!
