Easy Oven Roasted Potatoes

I'm almost embarrassed to share this recipe because it's so simple. There are literally only 4 ingredients - including salt and pepper! However, since we have these potatoes at least once a week, and Kiddo always asks for seconds (thirds, and sometimes fourths), I had to share.
So, here is one of the simplest, easiest recipes I will probably ever share here at Pinspired Home.





Easy Oven Roasted Potatoes

Ingredients:
  • 4 medium potatoes, cut into 3/4-inch cubes
  • 2 tablespoons olive oil
  • salt and pepper, to taste

Directions:
  1. Preheat the oven to 400 F. Toss the cut potatoes with the olive oil, salt, and pepper. I often use freshly ground black pepper and kosher salt, but regular table salt and pepper will work just fine.
  2. Spread on a baking sheet lined with foil, parchment, or a silpat.
  3. Bake for 35-45 minutes, until golden brown. 
Serves 3-4 people, depending on appetites. In our family of three, we rarely ever have leftovers. 

So simple, right? And delicious too! These Easy Oven Roasted Potatoes are great served with ketchup. We usually pair them with fish or grilled chicken, but they would also be great with pork or beef.
When it comes to cooking, and life in general, I've come to realize that simple is often best. Do you have any super-simple go-to recipes?

    1. Yum - true comfort food! I wish I could get Hubby to like beans, but he's just not a fan. He tolerates it in chili, but that's about it. He's a true meat and potato kind of guy. :)

  2. The nice thing about this recipe is that it's basically healthy French Fries in cube form. And it's cheap and doesn't require herbs or spice mixes.
    My all-time favorite oven-roasted potatoes recipe involves just olive oil and Lipton onion soup mix. It costs a little more money, but I LOVE how crispy the onions get. Yum!
    Simple recipes... Hmm. I definitely love a good grilled cheese. It's cheap, easy, and you can do so many variations on it. Quesadillas are also a classic go-to snack or meal for me and can be as simple or complex as suits me at the time. I also like to take ramen noodles and add whatever spices, veggies, and meat I have on hand. I guess that's not a recipe, but I do have my own favorite flavor combinations.

    1. Mmm... Ramen! I haven't had that in forever!
      The onion potatoes are what inspired this recipe, but you're right, it's cheaper to do it this way. Plus, the Onion Soup Mix has questionable ingredients like MSG. I've made them with different spices, but for my semi-picky eater, simple is best. I bet I could add some dried onion to get a similar outcome... I may have to try that!
