Menu Plan Monday: 10/6-10/12

 

It's a very brisk Monday morning here in the northeast. When we woke up it was 59 degrees in the house. Since the high should be almost 70 today, we opted not to turn on the heat or start a fire quite yet. We're all just bundled up in our cozy warm clothes, which is ok by me!

This past week it really started to feel like fall! We picked some apples from a neighbor's tree (with their permission, of course). The trees had been neglected for quite a while and I had to cut out bad spots from every apple (and a few worms too), but they were just fine for cider. Hubby rigged up what he calls a "hillbilly cider press," and we were able to yield over a gallon of yummy cider. I canned four quarts for later and we enjoyed the rest hot. It was delicious!


My goal is to post all about our simple cider press this week. We've been pretty busy here between Kiddo's birthday last week, fall activities, and pressing cider, but I hope to get back to a regular blog schedule this month.

Monday: Chicken & Rice Soup, Baby Carrots, Toast 

Tuesday: Baked Cod, Baked Potato, Green Beans

Wednesday: Chicken Fajitas

Thursday: Simple Pasta Bake, Broccoli

Friday: Chicken Salad Wraps, Baby Carrots

Saturday: Turkey Gyros, Turkey Gyros, Homemade Naan (using the Master Recipe), Cauliflower

Sunday: Crock Pot Pork Chops and Apples (Hubby's new recipe - coming soon!)

  1. Mmmm. I'm in the mood for soups, too! Just had my favorite black bean soup this weekend. Also made some applesauce last night and ate way too much of it while it was still warm!

    1. Hot applesauce sounds amazing - I would have eaten a bunch too! We have an apple picking play date next Monday and then we'll be doing some canning. :)

      The naan is amazing - you should definitely try it!! I use this recipe for the naan (http://www.formerchef.com/2010/03/09/healthy-bread-in-five-minutes-a-daywhole-grain-master-recipe/), but I'm sure a pizza dough recipe or store-bought bread dough would just work as well. Let me know how it turns out!

  3. Between Pinterest and this post, I have been wanting some hot apple cider. We are still flirting with the near 90s here, but I hope with each successive cold front to kiss the 90s goodbye for the rest of the year. So so so ready for soup weather!

      I can't imagine 90 degrees in October! Is it obvious I've never been to Texas? I'm sure I'll be envying you in a few months when we're sick of snow and freezing temps.
