Menu Plan Monday And Garden Update: 7/28-8/3


It's time for another Menu Plan Monday! How was your week? After a rough week, I am finally starting to feel fairly normal - summer colds are the worst! Between being sick, doing a bunch of post-vacation laundry, and catching up on the garden produce our sweet neighbor picked for us while we were gone, our house has descended into a bit of chaos. This week, my goal is to get a handle on the housework and clutter. Wish me luck!


Garden Update: 

This week we harvested zucchini, yellow squash, bell peppers, green beans, kale, and tomatoes. I froze more grated zucchini, made Sloppy Joe Zucchini Boats for dinner, tried my hand at freezing a zucchini lasagna, and grilled yellow squash as a side. The bell peppers were used for salad night, Sausage & Peppers, and "crunchy green pepper," Kiddo's favorite healthy snack. In addition to all the freezing and eating, Hubby and I also canned green beans and diced tomatoes. I love having a big garden!

This Week's Menu Plan: 7/28-8/3


Monday: Homemade Pizza

Tuesday: Tomato Sandwiches, baby carrots, green pepper slices

Wednesday: Salad Night

Thursday: Leftovers

Friday: Sausage & Peppers, Linguine, Sauteed Kale

Saturday: Zucchini Lasagna, Green Beans, Garlic Bread

Sunday: Chicken Fajitas, Guacamole

    1. There's still hope! Up here the tomatoes don't really start ripening in full force til August. Those 3 pints were all we've gotten so far! With about 30 tomato plants, we're hoping to have a large enough harvest to can diced tomatoes, salsa, and sauce for the whole winter.
      Here's hoping both of us are able to can a bountiful harvest, Ashley! :)

  2. I envy the garden! Too hot here in South Florida to grow anything right now and in the winter it's dark too early so I gave up a few years ago! I'm thinking I need to be making pizza soon as everyone is having pizza this week! (hopped over from Organized Junkie's Menu Plan Monday party)

      That's a shame about gardening where you live.
      Homemade pizza is probably the most-requested meal at our house. I hope to share the recipe to a very yummy crust soon, so stick around! :)

  3. We made a Kale salad for the first time and it was delicious! It had kale, onion, toasted sunflower seeds and blueberries with a lemon/olive oil vinaigrette. ~ Mom
