Garden Update:This week we harvested zucchini, yellow squash, bell peppers, green beans, kale, and tomatoes. I froze more grated zucchini, made Sloppy Joe Zucchini Boats for dinner, tried my hand at freezing a zucchini lasagna, and grilled yellow squash as a side. The bell peppers were used for salad night, Sausage & Peppers, and "crunchy green pepper," Kiddo's favorite healthy snack. In addition to all the freezing and eating, Hubby and I also canned green beans and diced tomatoes. I love having a big garden!

Tuesday: Tomato Sandwiches, baby carrots, green pepper slices
Wednesday: Salad Night
Friday: Sausage & Peppers, Linguine, Sauteed Kale
Saturday: Zucchini Lasagna, Green Beans, Garlic Bread
Sunday: Chicken Fajitas, Guacamole
