Menu Plan Monday 7/7-7/11 and Garden Update

Welcome back to Menu Plan Monday!
Did you enjoy your holiday weekend, U.S. readers? Hubby's parents came to visit and we had a nice time. It was a low-key Independence Day. We started out with a patriotic breakfast - I realized that our Berry Baked French Toast had red strawberries and raspberries, white cream cheese pieces, and blueberries. It was a happy accident... and also very delicious. 


We woke up to rain Friday morning, so we had to change our plans from visiting a local (outdoor) festival to something indoors. Cabela's is a neat place to visit, even if you don't plan to buy anything. Kiddo loved looking at the fish...

And Hubby and his dad enjoyed browsing through all the outdoorsy stuff you would expect to find at a sporting goods store. 
We didn't go anywhere to watch fireworks because a late night like that would have meant a cranky Kiddo the next morning. However, our neighbor set off quite a few big (and probably illegal) fireworks, so we were not truly deprived. I'm amazed Kiddo slept through it all.

Garden Update:

As for the garden, we harvested more broccoli and banana pepper, some lettuce, and our first green beans. We also picked over 2 quarts of blueberries and a pint or so of raspberries from our "mini orchard" (come back next week to get the full tour!). Fresh berries make me so happy. :)


I love being able to add fresh produce to our meals during the summer. We've enjoyed corn on the cob, watermelon, and lots of garden goodness. I'm excited to see what we'll harvest and enjoy this week!

Monday: Salad Night (with lots of fresh, seasonal veggies)

Tuesday:  Turkey Salad Sandwiches, Baby Carrots, Green Pepper Slices

Wednesday: Turkey Tetrazzini, Balsamic Sauteed Summer Squash

Thursday: Leftovers

Friday: Chick-Fil-A for Cow Appreciation Day 

Saturday: TBD
