During the summer, in addition to a meal plan, I'll give a rundown of what we've harvested in the garden each week.
This week we harvested broccoli, banana peppers, blueberries, raspberries, and kale. We ate some of the broccoli and froze the rest, along with the peppers and berries. I'll be freezing the kale today to use in soup this winter. I hope to share a tutorial on that next week.
I also went to the strawberry patch and picked a lot of berries for both eating and freezing. I'll share more about that tomorrow.
Now, on to meal planning. Hubby's parents are visiting for the weekend, so I'm including a few breakfast and dinner options in addition to the normal dinner menu.
Menu Plan Monday 6/30-7/6/14
Monday: Salad NightTuesday: Sandwiches & Softball
Wednesday: Leftover Chinese Food
Thursday: Smoked Whole Turkey, Broccoli, Baked Potatoes
Friday: Dinner out
Saturday: Freezer-Friendly Turkey Cheddar Burgers & Hot Dogs, Green Beans (hopefully from the garden!), Easy Oven Roasted Potatoes
Sunday: Turkey Tetrazzini or a variation of Turkey-Biscuit Pot Pie, whatever vegetable is fresh from the garden.
Breakfasts: Berry Baked French Toast (with fresh berries from our garden), Scrambled Eggs, Fruit, Yogurt.
Lunches: Sliced Turkey Sandwiches, Quesadillas, PB & J
From the Freezer:
Turkey (purchased on sale at Thanksgiving), Freezer-Friendly Turkey Cheddar Burgers, Hot Dogs (also purchased on sale)
