How was your weekend, friends? We've been soaking up the sunshine and beautiful weather. It's supposed to be another beautiful day today, so you can guarantee we'll be spending time outside!
This week's menu is a bit different from the norm: nothing from the freezer, only one in the crock pot, and very simple meals, all leading up to a big Easter Dinner at our house. I'm excited to spend some time with my family this weekend!
This Week's Menu: 4/14-4/20
Monday: Salad Night
Tuesday: Crock Pot Falafel
Wednesday: Breakfast for Dinner - probably pancakes, sausage, and applesauce
Thursday: Tuna Sandwiches (Softball night)
Friday: Grilled Chicken
Saturday: Easter Dinner - Ham, Potato Salad, Asparagus, Carrot Souffle, Rolls, Black Forest Cake for my dad's birthday, Carrot Cake Whoopie Pies (recipe coming soon!)
Sunday: Leftovers
Recipes I Tried:
I tried three new recipes this week. The first was the Simple 2-Hour Meat Marinade from Andrea Dekker. I forgot to make the other marinades that I planned to try in time, so this 2-hour marinade was the perfect solution. Hubby and Kiddo devoured it! I will definitely make this again, though next time I'll use a little less lemon pepper.I also tried my own version of Carrot Cake Whoopie Pies. Come back tomorrow for the recipe. :)
Finally, I made these delicious Snickerdoodle Blondies for Small Group. They got rave reviews, and I thought it was pretty funny that all the inside pieces were taken and only a few edge pieces were left to take home. I definitely plan to make them again!
