Menu Plan Monday: 11/18-11/24


Good morning, friends!
Well, this has been an interesting week. I've had some computer issues (including the "blue screen of death" -- ugh!), which limited my ability to do blog stuff, but I think I found a fix. I'm hoping to get back into my regular Monday-Wednesday-Friday posting schedule this week.
The beauty of a Menu Plan is that it's just a plan, and I can change things as needed. Last week's menu saw its fair share of changes. Thursday, I was going to try converting a favorite recipe to a crock pot meal, but I just didn't have the energy or motivation to do all the prep work that morning. If you follow me on Facebook, you know that I made tilapia (which was planned for Saturday) instead. Then on Saturday, Hubby could tell I was feeling a bit burnt out and suggested we use a gift card to a local restaurant. (Another reason why I love him!) Sunday was a night of leftovers, including my leftover steak from eating out - yum!
This week, I was feeling very conflicted when I created the menu plan, so you'll see several meals where there are two options. In each instance, both options have ingredients that are already in my fridge, freezer, or pantry. I have to say that it's very freeing to give myself some options. It will all just depend on what mood I'm in that day.

Chicken and Rice Soup, biscuits

Tuesday 11/19
Leftover Beef Stew, toast

Wednesday 11/20
Chicken Thai Curry or Quesadillas

Thursday 11/21
Slow Cooker Buffalo Chicken Sandwiches, baby carrots
or Crock Pot Cheaters Chicken Cacciatore, green beans, rice or pasta

Friday 11/22
Dinner with friends

Saturday 11/23
Dinner with (different) friends
Homemade Pizza or Meatballs

Sunday 11/24
Leftovers

  1. Oh no! I just hate it when we have computer issues. In the past, I would ask our son to fix it but he's busy with work.
    On the other hand, I have been getting more confident at working on the issues myself.

    1. I know... I had some more issues after posting this, so I spent my free time afternoon trouble-shooting. With a toddler, my time to blog is mostly limited to nap time, so it's frustrating when I lose my "blog time."
