Menu Plan Monday: 1/19-2/1



Well, good evening!

How was your weekend? Ours was a bit busy. Friday morning I got up early so I could take my fasting 3-hour glucose test (fun, fun) as soon as the lab opened. All went well and I was home before 10:30. Saturday, I attended a Ladies' Breakfast at church while the boys ran some errands (including ordering some new egg-laying chicks for spring!) and changed the oil on our car. Hubby said that Kiddo was right under the car with him, pretending to fix the car with his tools. I love how much Kiddo enjoys helping his daddy. He's already such a hard worker!

Saturday night, we had friends over for Spinach Tortellini Soup (with Sausage added for the meat-eating men). The kids, who were not so sure about the "green stuff," ate plain tortellini and baby carrots. It was a perfect way to make a meal that everyone would eat!

Yesterday (Sunday), we had no trouble getting to church, but by the time we were ready to go home, the combination of rain and freezing temperatures meant the roads were a sheet of ice. We had an offer to weather the storm at our friends' home near the church, but we saw the salt trucks out, so we decided to give it a try anyway. Once we hit the first hill, we knew we could not go safely back to our friends' house. A lot of prayer, several detours, and an hour later, we made it home - a trip that normally takes us 15-20 minutes. I'm thankful Hubby is a very safe driver, and that we have 4-wheel drive, because we saw several cars that had gone off the road as we made our way home. Needless to say, we stayed home the rest of the day!

Well, I guess I should get on to the main point of the post: the menu! Once again, I'm planning two weeks at a time, and it's working really well.

Two-Week Menu Plan: 1/19-2/1


Week 1: 1/19-1/25


Monday: Leftover Tortellini Soup & Salad

Tuesday: Stuffed Pepper Soup, Corn Chips or Cornbread

Wednesday: Ham Slices, Macaroni & Cheese (both from the freezer), Green Beans

Thursday: Roast Chicken in the Crock Pot, Potatoes, Carrots

Friday: Leftover Stuffed Pepper Soup

Saturday: Leftovers

Sunday: Chicken Salad Sandwiches

A perfect Super Bowl Food!


Week 2: 1/26-2/1


Monday: Venison Fajitas

Tuesday: Teriyaki Chicken in the Crock Pot

Wednesday: Venison Stew

Thursday: Flounder, Potatoes, Broccoli

Friday: Homemade Pizza

Saturday: leftovers

Sunday: Church Potluck for lunch, Buffalo Chicken Sandwiches for dinner
