Menu Plan Monday: 4/21-27

Good morning! I hope you had a wonderful Easter!
We had my family over for Easter Dinner on Saturday evening and we had a great time enjoying each others' company. Normally, I break out the fine china and fancy linens, but I was very laid back this year. Nobody minded the paper plates and bright blue checkered tablecloth anyway. :)
The Mini Carrot Cake Whoopie Pies were a huge hit, especially their small size - perfect for sampling after a big dinner! I have a feeling they will have a spot in our Easter meal for years to come.   
We also celebrated my dad's 60th birthday. He's a pretty awesome daddy, and a fabulous Grandpa to Kiddo. Happy birthday, Dad!

I served ham on Saturday, so you'll see a lot of ham in our menu this week. It certainly is a special treat at our house! One dish I knew I wanted to make was this Ham & Swiss Casserole. It is by far one of my favorite foods! I'll work on getting a better picture this time around. I've learned some new photography skills since then. :)

Menu Plan Monday: 4/21-4/27


Monday: Salad Night

Tuesday: Venison Fajitas, Green Beans

Wednesday: Ham & Swiss Casserole, Rice

Thursday: Something quick and easy - maybe Southern Ham and Egg Salad Sandwiches if we're not sick of ham yet. :)

Friday: Small Group Cookout (We're in charge of hot dogs, buns, and condiments)

Saturday: Leftover Ham & Swiss Casserole, Baked Potato

Sunday: Crock Pot Teriyaki Chicken (Freezer Kit), Rice, Broccoli


Freezer & Crock Pot:
This week they'll be one and the same: Crock Pot Teriyaki Chicken, which is one of Hubby's absolute favorites. I made a freezer kit when chicken thighs were on sale and it's been waiting for a busy week. Otherwise, we'll be eating lots of leftover ham (a real treat!) and some venison from the freezer.

On Tuesday, I shared a recipe for Mini Carrot Cake Whoopie Pies. I served these babies at our Easter Dinner to rave reviews!
Wednesday was time for a Four Weeks to Clutter-Free Closets update. This past week's challenge was the coat closet, and I'm proud to report that I was able to reclaim and reorganize our coat closet for $0 using what we already had on hand!

And Thursday was a quick tip to keep hammer-happy toddlers from damaging your coffee table.
And on Saturday, the winner was drawn for the Cast Iron Starter Set! Congratulations, Sharon!
