Menu Plan Monday: 12/9-12/15


It's snowing as I type this and our backyard is a winter wonderland. In spite of the snow, my outdoorsy hubby is out splitting wood - for fun. Oh, it's definitely to keep us warm this winter, but he enjoys staying active, and splitting wood is one way to do just that. His wife on the other hand, is content staying inside by the wood stove, wrapping presents, watching football, and blogging.
This snow is really starting to put me in the Christmas mood. We put our tree up last Sunday and finished hanging the last of the ornaments on Friday morning. There's something so peaceful about a lit Christmas tree. Add a napping child, a roaring fire, and snow falling in the background, and it's a recipe for pure relaxation on a Sunday afternoon.

On to menu planning. Last week, things didn't go exactly as planned. Kiddo ended up being sick with a nasty cough and fever on Tuesday and Wednesday, and all he wanted to do was snuggle with Mommy. As the old poem says, "babies don't keep," so I gave in and spent a lot of the day on the couch watching PBS with my boy on my lap. I don't regret one minute of it. The good news is that we had leftovers to serve for dinner on those nights.

Monday:
Quesadilla Casserole

Tuesday:
Salmon, Oven Roasted Potatoes, Broccoli

Wednesday:
Lasagna Casserole, Green Beans
Thursday:
Venison Stew, Quick Mix Biscuits

Friday:
Leftovers

Saturday:
Community Christmas Dinner

Sunday:
Leftover Venison Stew

This week I'm hoping to get most of our Christmas preparations done. I only have a few more gifts to purchase and I'm anxiously waiting for packages to arrive (gotta love online shopping!) so I can get everything wrapped. In the kitchen, I'm hoping to make a few freezer meals to help feed the crowd over Christmas, and maybe even make some cookies with Kiddo. On Saturday, Hubby and I will be helping out as our church hosts its annual Community Christmas Dinner. We haven't been to one yet, so I'm excited to be involved this year.
Last night (Saturday), we went to a special event at my parent's church called the "Bethlehem Walk." From the moment we entered, the church was decorated as if we had been transported back to Biblical times. We started in a marketplace with a blacksmith, basket weavers, candle makers, and other shopkeepers. Then a guide took us through rooms where scenes from the Christmas story were presented, from Mary telling Joseph that she was expecting a child to the manger scene. Amidst all the holiday busy-ness, it was a great way to re-focus on Christ - the true reason for Christmas. I hope you have the opportunity to do the same.
