Menu Plan Monday: 11/25-12/1

Ok, whoa! How in the world am I planning for December already?  I always feel a little under-prepared for the holidays, but I think I've been in denial this year. I only have a few Christmas presents purchased so far, so I need to get my rear in gear. But first, there's Thanksgiving!
I have quite a to-do list to accomplish before Thursday, mostly with recipes to make. Thankfully, I have a helper this afternoon. One of the teen girls from our church had early dismissal today, so she came over to help me with Kiddo and various other projects. We had fun making some gingerbread house pieces before Kiddo woke up from his nap.

Now, on to menu planning. Last week I really appreciated having flexibility in my menu plan. I ended up making Chicken Thai Curry, my own version of crock pot Buffalo Chicken Sandwiches, and homemade pizza. So much yum! The Thai Curry was delicious (I may have eaten some of the leftovers cold right out of the fridge) and I can't wait to share the Buffalo Chicken Sandwich recipe sometime soon.

If you missed last week's posts, here they are:
On Wednesday, as part of our Stock Your Freezer Series, I shared a list of garden and grocery produce that we have successfully frozen.

On Friday, I shared how to make a easily make your own Chicken Broth or Stock using kitchen scraps that you would normally just throw out.

And for a bonus post on Saturday, I shared a recipe for Chicken and Rice Soup from scratch. So yummy, and pretty easy too.

Have a wonderful week, and Happy Thanksgiving!
